Until a few months ago, “jamon iberico” (or iberico ham) was illegal, at least in the United States.
Now, it’s one of the featured delicacies at Vegas’ own Guy Savoy restaurant, inside Caesars Palace.
Guy Savoy serves the very best jamon iberico, called jamon iberico de bellota. Bellota can cost close to $100 a pound, making it among the most expensive hams in the world.
Jamon iberico de bellota comes from pigs raised in the lap of luxury. They each have an acre of land to roam, along the border between Spain and Portugal, and are acorn-fed. Astonishingly, bellota ham is cured for three years before it is served.
Oh, and bonus pronunciation tip: Guy is pronounced “gee,” and Savoy is pronounced “salve-wah.” Emphasis on the “salve” part. Took us awhile to get the hang of it, too.
